Have you ever loved a particular dish at a restaurant so much you craved it all the time? Me too, in-fact that is how this recipe came to be. I used to work at a brewery as a server. The restaurant had a delicious sweet potato burrito on the menu. I ordered it every single time. When I moved away from that town I had to figure out a way to satiate my cravings so I began experimenting with this copy cat dish. It has gone through many iterations- nachos, burritos, and finally tacos. The dish was finally complete when I found chipotle ranch at the store. The ranch is the ultimate addition, while you could skip it for a healthier option, I think it pulls the whole dish together.
It might seem strange to combine sweet potato with a Mexican dish but it is crazy good. So good that one of my housemates (who is a true carnivore and normally turn his nose up at anything veggie based) loved this dish so much he eagerly helped finish off all the leftovers over the course of the week
Makes about 15 small tacos
Drain and put into the casserole dish with the other ingredients.
Set aside and let cool.
